Shrinkflation: Paying More for Less Is No Way to Live

The bag gets smaller. The price goes up. The flavor disappears. Greg has a few thoughts on that.

I was raised in a big family. Ten kids will teach you a thing or two about making food stretch.

You learn not to waste. You learn how to cook. You learn that when you sit down at the table, everybody ought to get enough.

That is why this shrinkflation business gets under my skin.

You have seen it. A bag of chips that used to feed the family now looks like it has already been opened. A box of crackers gets lighter. A package gets smaller. The price does not go down one nickel.

Usually, it goes up.

Then they have the nerve to call it “new packaging” or “improved value.” Well, I have been around long enough to know a smaller bag when I see one.

It is not improved value.

It is less product for more money.

The Chips That Started It

I like potato chips. Always have.

A good chip ought to have a little crunch, a little salt, and enough flavor that you want another handful. What I started finding was bags full of air, fewer chips at the bottom, and seasoning so weak you could barely tell it was there.

I figured if I was going to pay that much, I could make something better myself.

So I did.

I started making potato chips with olive oil and seasoning them with a blend I had been working on. I made batches at home. I tweaked the recipe. I handed them out to friends and family. Before long, people were asking where they could get more.

That seasoning became America’s Best Seasoning.

Food Should Still Feel Worth It

I am not saying every meal has to be fancy. Most days around here, it is not.

But food ought to taste good. You should not have to use half a bottle of something to get any flavor. And you should not have to pay a premium for a product that leaves you disappointed.

What Does “Clean” Really Mean?

“Clean” gets tossed around a lot these days. Greg explains what it means to him and why the label matters.

People use the word “clean” for everything these days.

Clean food. Clean eating. Clean ingredients.

Sometimes I think folks say it so often they forget what it’s supposed to mean.

Here is what it means to me: know what you are putting in your body.

That is it.

You do not need a dictionary full of fancy words. You do not need a nutrition degree. Just turn the package over and read the label.

If the ingredient list looks like something from a chemistry lab, you ought to ask yourself why it is in your food.

I Like Things Simple

On a farm, simple usually works best.

Feed the animals. Mend the fence. Do the work that needs doing. Do not make a mess where one does not need to be made.

I feel the same way about food.

I want flavor in my seasoning. I want it to make a good meal taste even better. But I do not see the need to pile in artificial colors, artificial flavors, or MSG just to make something look brighter or hit your tongue harder.

Greg did not make a hot seasoning just to prove it was hot. He made it to bring real flavor to the table.

I like spice.

But I do not understand the idea that hot food has to hurt.

You have probably had it before. Somebody hands you a wing, a chip, or a bowl of chili and says, “This one is hot.” You take one bite, and suddenly your eyes are watering, your nose is running, and you cannot taste a thing.

That is not flavor.

That is punishment.

I do not want to punish anybody at the dinner table. I want them to enjoy their food.

There Is More Than One Kind of Heat

Heat comes in different ways.

Some peppers hit you right away. They are sharp and bright. Others build slowly, then hang around for a while. Some kinds of heat are smoky. Some are sweet. Some are earthy. Some are just plain mean.

The trick is knowing how to use them.

A good hot seasoning should give you a little fire, sure. But it should also bring flavor. It should make chicken, burgers, eggs, vegetables, popcorn, and snacks taste better.

If all you remember is how badly your mouth burned, somebody missed the point.

I Kept Working the Recipe
