Hot Should Taste Good, Not Just Hurt
Greg did not make a hot seasoning just to prove it was hot. He made it to bring real flavor to the table.
I like spice.
But I do not understand the idea that hot food has to hurt.
You have probably had it before. Somebody hands you a wing, a chip, or a bowl of chili and says, “This one is hot.” You take one bite, and suddenly your eyes are watering, your nose is running, and you cannot taste a thing.
That is not flavor.
That is punishment.
I do not want to punish anybody at the dinner table. I want them to enjoy their food.
There Is More Than One Kind of Heat
Heat comes in different ways.
Some peppers hit you right away. They are sharp and bright. Others build slowly, then hang around for a while. Some kinds of heat are smoky. Some are sweet. Some are earthy. Some are just plain mean.
The trick is knowing how to use them.
A good hot seasoning should give you a little fire, sure. But it should also bring flavor. It should make chicken, burgers, eggs, vegetables, popcorn, and snacks taste better.
If all you remember is how badly your mouth burned, somebody missed the point.
I Kept Working the Recipe
When I started working on Hot America’s Best Seasoning, I did not want to make the hottest bottle on the shelf.
There are plenty of people already doing that.
I wanted to make a seasoning that had some kick but still let the food come through. I wanted heat that made you reach for another bite, not another glass of milk.
So I kept working at it. And working. And working. This was a tough assignment.
I adjusted the balance. I tasted it on different foods. I tried it on meats, vegetables, eggs, popcorn, and snacks. I paid attention to where the heat landed and how long it stuck around.
That is how the Hot ABS blend came together.
It is not there to show off. It is there to make food more enjoyable.
Use It Your Way
If you like a mild kick, start with a little shake.
If you like more heat, keep going.
That is the nice thing about a flavor-to-taste seasoning. You are in charge. Put enough on to make it right for you.
